In 1969, “Baikohken” opened its doors, embodying the sentiment of “illuminating the plum” within the context of the three stages of plum blossoms, bamboo, and pine - a symbolism deeply rooted in Japanese culture. Even after forty years, Baikohken remains true to its original ideals, proudly standing as a representative ramen shop in Asahikawa, faithfully serving each bowl with dedication.

The “W soup,” said to have originated in Asahikawa, combines the richness of broth derived from pork bones and chicken bones, known as the “meat-based” broth, with the savory essence from dried sardines and kelp, known as the “fish-based” broth. This unique blend is specially prepared and pairs exquisitely with medium-thin curly noodles.

Soup

Rich and deep yet refreshingly light in the aftertaste,
you can drink it up to the last drop.
Featuring a blend of broth from pork bones and chicken bones, known as the ‘meat-based’ soup, and broth from kelp and dried sardines, known as the ‘fish-based’ soup, the characteristic of this soup is the ‘double base.’
Despite its rich and deep flavor, it has a light aftertaste,
allowing you to effortlessly finish it till the end,
earning it the nickname ‘kote-assari’ (rich yet light) soup.

Noodles

Our special blend of wheat is used to create our signature medium-thin curly noodles. These noodles were devised to provide better warmth during the harsh winters of Hokkaido. They have a stronger curl than usual, allowing them to absorb more soup. These noodles are made entirely in-house and dose not contain eggs, making them suitable for those with allergies to enjoy with peace of mind.

Bamboo shoots (menma)

Soft yet crispy, with an exquisite texture, the thick bamboo shoots are an indispensable part of the Baikohken Ramen experience. Some are as large as a thumb, but all offer a soft, crispy, and delightful texture. Some customers even order bamboo shoots as a standalone dish while waiting for their ramen, using them as a beer snack.

Chashu

Juicy pork soaked overnight in our original homemade soy sause, the sauce softens the meat and release the savory flavor that expresses the fine quality of chashu.

Pork bone

We use exclusively domestically sourced pork bones, a rarity even in Japan. We procure all our pork from the rare ‘Kamikomi pork,’ where only 3 out of 100 pigs yield this premium cut. With this abundant supply of domestically sourced pork bones, we indulge in the luxury of crafting our broth. In Japan, there are only a handful of establishments where you can savor ramen made with domestically sourced pork bones.
